Most likely the MORryde Suspension Upgrade Kit part # MR76ZR is the correct fit for your 2011 Jayco Octane T26Y but you will need to measure your current shackles to be sure. If yours are 3-1/8 inches from bolt hole center to bolt hole center this kit will fit well. I recommend checking out the Castle Rock ST225/75R15 Radial Tire w/ 15" Liger Aluminum Wheel - 6 on 5-1/2 - LR D - Black # LH29FR. As far as specs goes these match up with everything you mentioned (I'm guessing you meant 2,600 lbs max - the tire is rated for 2,540 lbs) and this comes with a 5-year warranty on the tire which is pretty rare. The Off White Ceiling Garnish # FVK1060-80 will fit your application perfectly. It has the 6" leg that you'll need to cut down to fit your 5-1/4" application but aside from that everything else will match up perfectly.
